Pan Seared Shrimp With Wilted Spinach

Ingredients:

4-5 slices of bacon
8-10 large shrimp, peeled, deveined
paprika
garlic powder
salt
black pepper
lemon juice
baby spinach
2 cloves garlic, minced

Directions:


Clean and dry the shrimp thoroughly using paper towels. Season with the salt, pepper, garlic powder and paprika and toss well.
Chop bacon and put it in a large skillet. Cook over medium heat until crisp. Remove bacon bits and set aside on a paper towel.
I used the bacon fat instead of the vegetable oil to fry the shrimp. Everything is better with bacon fat.
Sear shrimps about 3 minutes per side or until pink. Remove shrimp and set aside. Drizzle with lemon juice.
Add minced garlic to the remaining fat or oil and saute it for about 30 seconds on medium heat.
Fill the skillet with spinach and turn leaves with a tong until they wilt. Season with salt and pepper.
Serve spinach with seared shrimp and bacon bits.
