Fried Breaded Zucchini Slices

with bread crumbs

Ingredients:

2 medium zucchini, cut into 1/4 inch slices
1/2 cup seasoned dry bread crumbs
1/2 cup flour
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
2 eggs

Directions:

without bread crumbs

Put flour in a small bowl.
Beat eggs in a small bowl. Add black pepper and garlic powder (if you use plain bread crumbs add salt).
Put bread crumbs in a separate bowl.
Coat zucchini with flour, place in egg mixture and than cover with bread crumbs.
Heat oil in a large skillet. When oil is hot add the breaded zucchini slices and fry on a medium-high heat until golden brown.
You can make this using panko, or bread crumbs. If you like them duper crunchy, dubble dip them for a thicker coat.
Sometimes I skip the bread crumbs, I just put the zucchini slices in the flour and in egg mixture and fry them.

Silvie's Potato Pie - Potato Pancake

There is nothing more comforting than a big pile of potato pies. I could eat this for breakfast, lunch and dinner. I learned this recipe from my granny Szilvi.

Ingredients:
Filling:
10 medium potatoes
4 tablespoon oil
Salt
Black pepper

Dough:
750 g flour plus extra for kneading (5 cups)
25 g fresh yeast or 1/2 tablespoon dry yeast
400 ml warm water
4 tablespoon oil
1/2 tablespoon salt
1 teaspoon sugar


Boil potatoes in salted water until fork tender. Drain and mash the potatoes adding the oil, salt and black pepper. Let it cool and divide into 10 equal pieces.

Dissolve sugar in 1/4 cup warm water and add the yeast. In ten minutes the yeast should have dissolved and become a sludgy, frothy liquid. 
In large bowl put the flour, add the yeast mixture and mix well.
Add the rest of the warm water, oil, salt and knead for about 5 minutes until the dough is soft and moist.
Lightly flour the bowl and put the dough in it, cover with plastic wrap and let it rest 1 hour, in warm place.

Lightly flour a work surface and place dough on it. 
Using just enough flour to keep the dough from sticking to the work surface or to your fingers, gently shape it into a log. Cut it in 10 equal pieces.

Shape each into a ball and let them rise 10 more minutes onto a floured surface.


Roll out the raised dough and put the mashed potatoes in the center.

Fold the dough over the filling than roll it again. Make a little hole in the center.



Brush your pan with oil, put the pie in the pan and brush the pie with oil. Cook on medium high heat for about 3-4 minutes until golden brown. Flip over and cook for another 3 minutes.

Grilled Zucchini Salad

My Mom's Contribution :-)

Ingredients:
1 zucchini
sour cream or yogurt
minced garlic
salt
black pepper
fresh dill, chopped

Directions:
Cut zucchini into thin rings.
Season it with salt and black pepper.
Place slices on an oiled preheated grill or pan. Cook for about 3-4 minutes on each side, until zucchini is tender. Set aside and let it cool.
In a small bowl mix sour cream or yogurt with garlic, dill, salt and pepper. Pour mixture on the zucchini slices and refrigerate for at least 30 minutes.

This is a very refreshing salad, it's like a tzatziki with grilled zucchini. Serve it with grilled chicken breast or and mashed potatoes. Yummm

Banana Bread with Raisins


Banana bread with raisins
This is a really tasty banana bread. I made it so many times. I make it plain, or with raisins, with nuts or with chocolate chips and we just love it. It's moist and light in texture. Dangerously good. I have to make at least 2 loaves every time. We love it.

Ingredients:
(for 2 loaves)
2 cup granulated sugar
2 vanilla sugar
2 sticks unsalted butter, room temperature
4 large eggs

6 ripe bananas
2 tablespoon milk
2 cups raisins


4 cups all-purpose flour
2 teaspoon baking powder
2 teaspoon baking soda
2 teaspoon salt


Directions:
Preheat the oven to 325 degrees F.
Spray two loaf pans with Pam.
Mix the sugar, vanilla sugar and butter in a large mixing bowl until creamy.
Add the eggs one at a time, beating well after each addition.
Mash the bananas with a potato masher; add the milk and the raisins.
In another bowl combine the flour, baking soda, baking powder, and salt.
Add the banana mixture to the butter mixture and stir until combined.
Add dry ingredients; beat at low speed just until flour disappears.

Pour batter into the prepared pans.
Bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. (I check it after 1 hour to see if it’s ready).
Cool on a wire rack for 10 minutes.
Remove bread from pan, and cool completely before slicing.

Banana bread with raisins and chocolate chips



Note: Sometimes I pour half of the batter in one pan and I add 1 cup of chocolate chips in the remaining batter, mix it well and than pour it in the second pan.

This is so good, and I think it's the best next day. I love the one with raisins and chocolate chips because you have a little surprise in each bite: it's banana, than you taste chocolate, than raisins. it's never ending. Love it.
Perfect with a cup of coffee in the morning, or with a glass of milk, or a scoop of ice cream.

Quinoa with Mushrooms

I am a big fan of quinoa, and I wanted to have a nice simple warm side dish. Just like a rice with mushrooms, but with quinoa. If you want to make a vegeterian dish use just water and you will love it. This serves 4.

Ingredients:
olive oil
1 medium onion, chopped fine
1 teaspoon minced garlic
1 cup quinoa
1 1/2 cup chicken broth or water
1/4 teaspoon dry thyme
1 lb sliced mushrooms
1 teaspoon chopped fresh parsley
