Baked Salmon Fillet with Dijon and Panko

With just a few ingredients and maybe 2-3 minutes of preparation you can have a great dinner. You can't go wrong with this recipe.

Ingredients:
2 salmon fillets
2 teaspoon Dijon mustard
1/4 cup Panko
2 teaspoon butter
garlic powder
salt
black pepper

Directions:
Preheat oven to 400 degrees F (200 degrees C). Oil a baking sheet or line it with aluminum foil.
Place salmon skin-side down on foil. Season it with salt, pepper and garlic powder.
Cover the fillets with a thin layer of mustard.
Melt butter. Mix Panko with melted butter and spread the mixture on the fillets.
Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.

Note:
If you don't want to melt the butter, just top the Panko with cold pieces of butter. It will melt in the oven.
If you want to save some calories, skip the butter.
If you turn on the broiler at the end for about 1 minute you will have a super crunchy crust and more color.
You can use a spicy mustard for more flavor.

Grilled Lobster

Ingredients:
2 lobster
2 tablespoon vegetable oil
1 teaspoon sesame seed oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red crushed pepper

Directions:
Cut each lobster lengthwise (from head to tail). Cut the claws Use a sharp knife to split the claws only on one side.
After splitting, remove the sack from the lobsters head and remove the veins running through to the lobsters tail before grilling.
Combine remaining ingredients in small mixing bowl. Brush mixture onto flesh side of lobster tails.
Placed on the grill with the cut side down. Grill 3-5 minutes or until shell turns a bright red. Turn lobster over and baste with oil mixture to prevent meat from drying out. Leave lobster cut side up for an additional 4-8 minutes more.
Drizzle with lemon juice and serve with grilled asparagus.

Shrimp Scampi


Ingredients:
2 tablespoons olive oil
2 tablespoons butter
1 pinch red chili pepper flakes

4 cloves garlic (chopped)
1 pound shrimp (shelled and deveined)
1/4 cup white wine
1 lemon (juice and zest)
1 tablespoon butter
1 pound linguini or angel hair pasta
1 tablespoon chopped parsley

 
Directions:

Bring a large pot of generously salted water to a boil. Cook pasta in boiling water until just tender.
Put the shrimp on a large plate and pat theme dry with a paper towel. Season shrimp with salt and pepper. 
Heat the oil and melt the butter in a pan.  Add the red chili pepper flakes. Add the shrimp and saute until cooked, about 1-2 minutes, turn the shrimp over, add garlic and saute about 1 minute.
Remove the shrimp from the pan.
Add the wine and lemon juice and bring to a boil. Simmer the liquid until reduced by about half, about 3-5 minutes.  Add the butter, wait for it to melt and turn off the heat. Stir in shrimp. Stir in parsley and toss to coat.
Adjust seasoning.
Toss pasta well with shrimp scampi in a large bowl.
