In a mood for something light and easy to make? Give this a try. I make them with coconut, or cinnamon. Both are delicious.
4 ripe bananas
1 tablespoon peach schnapps
1/4 teaspoon ground cinnamon
1 tablespoon dark brown sugar
1/2 teaspoon coconut
Preheat the oven to 400°F.
I leave the banana in its peel, I cut through the fruit lengthwise, without cutting trough the bottom peel.
Lay them onto aluminum foil and place them in an ovenproof dish.
Pour peach schnapps over the bananas. Sprinkle on the cinnamon, coconut and brown sugar.
Wrap each banana in aluminum foil.
Bake for 15 minutes.
Serve hot, with a scoop of vanilla ice cream.
