Zucchini Feta Frittata
I had a lot of feta cheese and I didn't know what to cook..... This is a super easy thing, just mix together ingredients and than bake for 1 hour.
1 tablespoon olive oil
2-3 zucchini (grated)
1/2 lb feta cheese
1 cup asiago cheese
Shred zucchini and drain properly from their water while you prepare other ingredients.
Beat the eggs in a bowl. Add the olive oil, pepper, oregano, shredded zucchini and crushed feta cheese. Spray oil on a baking pan and pour the mixture in it.
Bake at 350F in a preheated oven for 45 minutes, sprinkle with shredded asiago cheese and bake until golden brown, aprox 15 minutes.
Let it rest for 15 minutes before slicing.
Serve it with a slice of toasted bread, some tomatoes, cucumbers, olives and that's it.
You can top it with some phyllo dough but I wanted to have a lighter pie, so no phyllo.
