Spekulatius S'Mores

Every year before Christmas I receive Spekulatius biscuits from my brother. They are really special for me :-)
For those who didn't hear about them, Spekulatius is a Dutch/German Christmas cookie. Delicious crunchy biscuits, they are very thin, with different flavors, like cinnamon, nutmeg, ginger and super cute shapes, like St. Nicholas, windmill, elephant, sheep...
We all love s'mores. I wanted to make them with Spekulatius biscuits this time - for my brother :-)

Ingredients: (for 5 s'mores)
10 Spekulatius biscuits
10 medium marshmallows
chocolate (I used Lindt bittersweet)

Preheat oven to 300°F.
Line a cookie sheet with aluminum foil, shiny side up.
Place 5 cookies/biscuits on the lined cookie sheet.
Top each cookie with 2 marshmallows.
Bake for about 4 minutes.
Remove from the oven.
Place the chocolate pieces on top of the marshmallows (3 squares) and cover with the rest of the Spekulatius cookies.

They are to die for :-)

  1. Ciao Anita! As I grew up in The Netherlands I ate a lot of speculaas (that's how the Dutch call it). It is common to eat these delicious cookies around the 5th of December and also Christmas. Seeing these cookies is like going back to my childhood. Boyfriend and I love to see what you have done with the cookies! Speculaas S'mores....we definitely want to try that. We actually have all the ingredients in house! Maybe a nice afternoon snack today.
    Thank you for the recipe!!!

  2. I am so glad that you like my idea. The best s'mores I ever had. Just the perfect combination of spice from the speculaas, smooth chocolate and that creamy marshmallow...hmmm
I still have speculaas, I keep them for special ocsions :-)
If you have any tip for me how to eat or use them I would be very happy. I like them with a cup of milk, I make s'mores or I sprinkle speculaas crumbles on greek yogurt with honey. Any recipe would apreciated.
Thank you for the nice comment.
