Parmesan Garlic Mashed Potatoes

Serves:  4
Ingredients
5 – 6 medium baking potatoes (about  – 3 lbs)
2-3 cloves garlic, mashed
1 cup low fat milk
1 tablespoon sour cream
1 tablespoon butter
1 teaspoon salt1/2 teaspoon white pepper

1 cup parmesan cheese

Directions:

Peel, wash and half or quarter the potatoes depending on size.
Place the potatoes in a large heavy pot and cover with cold water. Bring to a boil, reduce heat and simmer until soft when pierced with a fork.
Drain the potatoes while they are still hot and return them to the pot. Add cheese, garlic, butter and sour cream as well as seasoning and mash the potatoes (I like to use an electric mixer).
Add the milk gradually until you get the right consistency. Taste and adjust seasoning if needed.
