Meatloaf with hard bolied eggs

Ingredients:

1 1/2 pounds ground pork and beef (I used only pork)
1 egg
1 onion, chopped
1 cup milk
1 cup italian seasoned bread crumbs
garlic powder
salt and pepper to taste

Filling: 4 hard boiled eggs


Directions:

Preheat oven to 350 degrees F (175 degrees C).
Hard boil 4 eggs. Put them in an ice bath for 5-10 minutes and peel.
Saute onions until translucent.
Mix bread crumbs and milk in a bowl and let stand about 2-3 minutes. Add the meat, 1 egg (beaten), sauteed onion, season with garlic powder, salt and pepper to taste. Mix well.
Line the 5x9 inch loaf pan with foil for easy clean up and spray some oil on the foil.
Spoon half of the mixture into the bottom of your pan. Form small indentations for the hard boiled eggs and place eggs into mixture. Put the rest of the mixture into the pan over the eggs.
If you don’t have loaf pan just form it into a loaf and place in a lightly greased baking dish.
Bake for 1 1/2 hours.
If desired, spoon gravy over baked meatloaf slices.
